Yellow Rice with Pink Beans And Pork

Serves 7-9

5 cups Extra Long Grain Rice

5 ½ cups of water

¼ cup Canola oil

1 ½ Boneless cushion meat (pork) cut up in 1 inch pieces

½ bag of Pink Beans

1 cup cooking ham (diced)

½ cup of Salted pork (diced)

3 tbsp of Freakin Rican Sofrito

1 ½ tbsp Oregano

½ can tomato sauce

2 ½ envelopes of Sazon

¼ tsp Ground pepper corn

Okay first step take your beans rinse them and put them to boil in a small pot with with ½ tsp

salt. Let them boil for hours till soft continuing to add water . Once soft and the water has

reduced to about a cup (very little water left) add ½ sazon ,1 tbsp Sofrito, ½ tsp cumin ,1/2 tsp

oregano, ¼ tsp vinegar, ¼ tsp salt. TIP, make the beans a day before, as they take a long time.

Okay now lets take a large cooking pot for your rice. Turn flame on to medium . Add your Oil

then your Diced cooking ham, salted pork and boneless pork (pork shoulder). Sauteed them for

a good 15 minutes covered. Now add 2 tbsp of Freakin Rican Sofrito ,1 tbsp salt, 2 packages of

sazon,1tsp Oregano, ½ tsp Cumin, ½ can tomato sauce, ¼ tsp pepper corn, now lower the flame

to low/med. Add your beans in then your rice. Stir everything together really good . Add your

water. Cover with a clean banana leaf then place the cover on and cook for 20 mins. Open stir

everything well. Cover again for another 20 minutes.. And Weepa finally done . This will taste
